The quiet craft of the tadka

A tadka — whole spices bloomed in hot fat — takes seconds and decides everything. Too cool and the spices stay raw; too hot and they turn bitter in an instant.

We weigh every temper and time it to the second. The same dal, tempered two ways, becomes two different dishes.

It is the least visible part of Indian cooking and, we'd argue, the most important.
